Chicken patties with creamy mushroom sauce

For the Patties:
500 g
ground chicken

small onion, finely chopped

garlic clove, minced
1
egg

breadcrumbs (or stale bread, grated)
1 tbsp
mustard
2 tbsp
olive oil
Salt
pepper
For the Sauce:
1
large onion
1
zucchini, sliced
5
portobello mushrooms, sliced
50 g
butter
2 tbsp
olive oil
1 tsp
tomato paste
1 tbsp
flour
500 ml
vegetable broth
300 ml
heavy cream
Salt
pepper
1 tsp
chopped parsley (for garnish)
Rice for serving
Execution
In a bowl, mix ground chicken, onion, garlic, mustard, olive oil, breadcrumbs, egg, salt, and pepper. Shape into 10 small patties.
Heat olive oil in a pan and sear the patties on both sides until golden. Remove and set aside.
In the same pan, melt the butter and sauté the onion, zucchini, and mushrooms until soft.
Sprinkle in the flour and stir well. Gradually add the vegetable broth and tomato paste, stirring until the sauce begins to thicken.
Add the cream, season with salt and pepper, then return the patties to the pan. Simmer for 10 minutes until the sauce thickens.
Serve with rice and garnish with chopped parsley.
