couverture chocolate
300 g
raw almonds
Fleur de sel (finishing salt)
Execution
Preheat oven to 180°C (fan). Roast almonds on a baking tray for 10–12 minutes until lightly golden. Let them cool completely.
Chop 400g of chocolate and melt it in a bain-marie (metal bowl over a simmering pot of water).
Once melted, remove from heat. Finely chop the remaining 100g of chocolate (almost powdered) and stir into the melted chocolate to temper it and give shine.
Add almonds and mix well.
Spoon clusters onto baking paper and sprinkle with fleur de sel.
Refrigerate until set.
