onion, finely chopped

garlic clove, minced

medium carrot, diced
200 g
chicken fillet, sliced
400 g
cooked rice (preferably day-old)
1 tsp
ground ginger
1 tsp
smoked paprika
3 tbsp
light soy sauce
2
spring onions, sliced
1 tbsp
fresh cilantro
1 tsp
sesame oil
1 tbsp
toasted sesame seeds (for serving)

Execution
Lightly beat the eggs in a bowl.
Heat olive oil in a hot pan, scramble the eggs, and remove them.
In the same pan, sauté onion, garlic, and carrot for 3-4 minutes.
Add chicken, season with salt and pepper, and cook for 5 minutes.
Add cold rice, spring onions, ginger, paprika, soy sauce, sesame oil, cilantro, and season again. Stir-fry for 2 minutes.
Serve in bowls, garnished with toasted sesame seeds.
