For the pancakes
200 g
all-purpose flour
2 tsp
baking powder
1 tsp
baking soda
2-3 tbsp
sugar

pinch of salt

large egg
150 g
full-fat strained Greek yogurt
250 ml
whole milk
2 tbsp
melted butter
1 tsp
vanilla extract
For the peaches
2
peaches
1 tbsp
butter
For serving
2 tbsp
spoon sweet syrup (cherry)
1 tbsp
yogurt or vanilla ice cream
Execution
In a large bowl, whisk together the egg, yogurt, milk, melted butter, and vanilla.
Add flour, baking powder, baking soda, sugar, and salt. Mix until just combined into a thick batter.
Slice the peaches into thin wedges.
Heat a non-stick pan over medium heat and add a bit of butter.
Arrange peach slices in a circle in the pan to form the base of a pancake.
Pour 2–3 tablespoons of batter over the peaches, covering them.
Cook for 2–3 minutes until bubbles form on the surface. Flip gently and cook for 1–2 more minutes until golden.
Repeat with remaining ingredients.
Serve warm with spoon sweet syrup and yogurt or vanilla ice cream.
