My favorite apple cake

Peel the apples, remove the cores, and cut them into small cubes. Place them in a bowl.

Add cinnamon, nutmeg, sugar, walnuts, and vanilla extract. Gently mix with a spoon.

Preheat the oven to 180°C (fan).

In a mixer bowl, combine olive oil, sunflower oil, orange juice, and sugar. Mix well until the sugar dissolves.

Add the eggs and continue mixing until smooth.

In a separate bowl, mix the flour, baking powder, and salt. Gradually add to the mixer and mix until combined.

Fold in the apple mixture with the batter.

Grease and flour a 30 cm round cake pan. Pour in the batter and smooth the surface.

Bake in the preheated oven for about 60 minutes or until a toothpick comes out clean.

Once baked, pour the chilled heavy cream over the warm cake.

Let it rest for 1 hour at room temperature to soak the cream, then refrigerate for 2 hours.

Slice and dust with powdered sugar before serving.
