Dough Ingredients

white vinegar

Filling Ingredients

ground cinnamon
50 ml
olive oil
For brushing
3 tbsp
honey
Execution
In a large bowl, mix both flours, salt, olive oil, and vinegar. Rub together with your hands until it resembles sand.
Add the water and knead until you have a soft, pliable dough.
Divide the dough into 4–5 equal balls, depending on the desired pie size.
Flour your work surface and roll out each ball into a thin sheet.
Brush each sheet with 2 tbsp olive oil, then sprinkle with 1½ tbsp sugar and cinnamon.
Fold the sides inward toward the center, without overlapping. Then fold the top and bottom the same way. Trim uneven edges if needed.
Heat a satzis (or non-stick pan) well, reduce the heat, and cook the pies for about 10 minutes, flipping often until golden on both sides.
Serve warm, drizzled with honey.
