Summer salad with melon, nuts & herbs

Melon Dressing
1
slice of melon
1 tsp
honey
1 tsp
mustard
25 ml
balsamic vinegar
75 ml
olive oil
Salt
Pepper
To serve

pistachios
2 tbsp
walnuts
1 tbsp
butter
50 g
feta cheese
Execution
Heat butter in a non-stick pan and lightly toast the nuts. Set aside.
Peel the melon and cut into thin slices. Use a mandoline to slice cucumber and radishes into rounds.
For the dressing, blend the melon slice with honey, mustard, vinegar, salt, and pepper. Gradually add the olive oil until emulsified.
In a bowl, combine the melon, cucumber, and radishes. Tear the herbs into large pieces and add them.
Drizzle with the dressing and toss gently.
Serve topped with toasted nuts and crumbled feta.
