Turkey sandwich with cranberries

For the sandwich
4 slices
bread (multigrain or sourdough)
2 tbsp
cranberry jam
120 g
goat cheese
40 g
dried cranberries
4 leaves
lettuce
100 g
roasted turkey, shredded
1 tbsp
mayonnaise
1 small
cucumber
1 small
avocado
1 tbsp
olive oil
salt
pepper
For serving
mint leaves
1/2 tsp
honey
Instructions
For the sandwich, toast the bread slices, spread them with cranberry jam and place the goat cheese on top. Sprinkle the dried cranberries so they stick to the cheese.
Place a lettuce leaf on each of these two slices, creating a “shield” so the cheese doesn’t get moist.
In a bowl, mix the shredded turkey with the mayonnaise, olive oil, salt and pepper to make it juicier. Spread the mixture over the lettuce.
Add the diced cucumber and avocado.
Cover with the remaining lettuce leaves and close the sandwiches with the remaining bread slices.
