Whole roasted cauliflower with tahini cream

For the cauliflower:

whole cauliflower
4 tbsp
olive oil
1 tsp
ground coriander
1 tsp
smoked paprika
1/2 tsp
cumin
1 tsp
dijon mustard
Salt
Pepper
For the tahini cream:
100 g
Greek yogurt
100 g
tahini
50 ml
lemon juice
20 g
honey
50 ml
olive oil
50 ml
water
Salt
Pepper
To serve:
2 tbsp
pomegranate seeds
1 tbsp
toasted sesame
1 tbsp
fresh coriander leaves
Execution
Preheat oven to 200°C.
Mix olive oil with spices and brush over the cauliflower.
Roast for 30–35 minutes until golden and caramelized.
For the tahini cream, mix yogurt, tahini, water, lemon juice, honey, and finally the olive oil.
Season with salt and pepper.
Serve warm over the cream and top with pomegranate, sesame, and coriander.
