Poached eggs on bagels with cream cheese and florina pepper

For the poached eggs:

white vinegar
Salt

For the bagels:

For serving:

Florina pepper (ready from the jar)

cream cheese
Olive oil for serving
Flower salt
½ tsp
chili flakes (optional)
Prepare the poached eggs:
In a saucepan, fill it with water about ¾ full and heat until it simmers (small bubbles on the surface, no vigorous boiling).
Add 2 tbsp vinegar (this helps the egg whites set around the yolk).
Crack each egg into a small bowl or cup to check that the yolk remains intact. Add ½ tsp vinegar to each bowl and wait for 30 seconds before moving to the next step.
Create a swirl in the water by stirring with a spoon or whisk. This will help the egg whites wrap around the yolk.
Carefully drop the egg into the center of the swirl.
Simmer for 3 minutes, being careful not to break the yolk (ensure the water stays at a gentle simmer).
Remove the egg with a slotted spoon and place it on a paper towel to drain.
For serving:
Cut the bagels in half.
Toast the bagel halves in a skillet until golden brown with a little olive oil.
Spread cream cheese on the bagel halves and top with pieces of Florina pepper and parsley.
Place one poached egg on each bagel half.
Drizzle with olive oil and sprinkle with salt, pepper, and optional chili flakes.
