For the halloumi

halloumi
2 tbsp
flour

egg
4 tbsp
breadcrumbs
4 tbsp
olive oil
salt
pepper
For the sauce
2 tbsp
olive oil
1
garlic clove
200 g
grated tomato
1 tsp
capers
1 tsp
fresh thyme
a few drops of liquid basil (optional)
salt
pepper
Instructions
Cut the halloumi in half and boil it in hot water for 10 minutes until softened. Place each piece between two sheets of kitchen paper and roll it with a rolling pin until thinner and even.
Coat the halloumi in flour, then in beaten egg, and finally in breadcrumbs. Heat the olive oil and fry until golden and crispy on both sides.
For the sauce, heat the olive oil, add the garlic for a few seconds, then add the grated tomato, capers, thyme, salt and pepper. Simmer until lightly thickened. If you want, add a few drops of liquid basil.
Place the schnitzel on top of the warm sauce and serve immediately.
