Tuna crudo with citrus & soy sauce

For the sauce:
60 ml
soy sauce
30 ml
rice vinegar
1 tbsp
honey
Juice of 1 lemon
Juice of 1 orange
Salt, pepper
For the crudo:
150 g
fresh tuna
2
strawberries
2
segments of pomelo (or grapefruit)
Segments of 1 orange
1 tbsp
fresh mint leaves
Zest of ½ lemon
1 tbsp
olive oil
1 tsp
toasted sesame seeds
Execution
Prepare the sauce: In a bowl, mix lemon juice, orange juice, soy sauce, rice vinegar, honey, salt, and pepper until the honey dissolves.
Slice the tuna into thin pieces, about ½ cm thick.
Wash and clean the strawberries, orange, and pomelo. Dice the strawberries and separate the citrus segments, carefully removing membranes and fibers.
Arrange the tuna slices on a plate and drizzle with the prepared sauce.
Top with the fruit pieces and drizzle with olive oil.
Finish with lemon zest, toasted sesame seeds, and fresh mint leaves.
